Thanksgiving in Fredericksburg Starts With a Preorder Deadline: The Long-Weekend Calendar From Stone Ridge

When does Thanksgiving actually start in Fredericksburg? The holiday is Thursday, November 26, 2026, but the town's order forms close earlier, and the first deadline is six days from today.

Visit Fredericksburg's 2026 Thanksgiving dining roundup lists 20 places serving on the holiday. Eight of them open by 7 a.m., and eight close by 3 p.m. The best-known barbecue pickup of the day ends at 1 p.m. For a Stone Ridge household, the plan for the week is set by those times, and the first deadline arrives next Wednesday.

The Order Forms Close First

If you want someone else to cook, the decision comes weeks before the meal. Here are the dates that matter between now and the end of the long weekend:

Date What closes or happens Details
Wed., Nov. 11 Chef Henry Thanksgiving box, earlier listed deadline Visit Fredericksburg's roundup date
Sat., Nov. 14 Chef Henry Thanksgiving box, later listed deadline Date on the HG Culinary order page
Mon., Nov. 23 Junebug's BBQ Thanksgiving orders due Pickup is Thursday
Wed., Nov. 25 Chef Henry boxes picked up or delivered Reheat-ready, in Fredericksburg
Thu., Nov. 26 Junebug's pickup, 11 a.m. to 1 p.m. 205 East Austin Street
Fri., Nov. 27 Last day for the $35 Turkey Trot entry, early packet pickup 3 to 6 p.m. Fredericksburg Elementary School
Sat., Nov. 28 Fredericksburg Texas Turkey Trot Entry is $40 on race day

The Chef Henry box has two deadlines because the two sources disagree. The HG Culinary order page lists November 14. Visit Fredericksburg describes a four-course meal and says to order by November 11. The box costs $75 per person and arrives the day before Thanksgiving, by pickup or delivery in Fredericksburg, so it's ready to reheat on Thursday. If you're planning around it, the earlier date is the one to meet.

Junebug's posts its holiday menu on its catering page, and it prices like a menu built for feeding a table. A whole smoked turkey breast is $75. A whole brisket is $200 and a half brisket is $110. Eight-link sausage bundles, original or jalapeño-cheddar, are $70, and a whole rack of ribs is $75. Sides come in quarts at $16 or half pans at $60, with green beans, mac and cheese, pinto beans, jalapeño coleslaw and potato salad on offer. For dessert there's a half pan of banana pudding or a half-sheet Texas sheet cake for $55. Orders are due Monday, November 23, and pickup runs from 11 a.m. to 1 p.m. on Thursday at 205 East Austin Street.

The two-hour pickup window shapes Thursday more than the menu does. Picking up brisket at noon means eating at 2, not 6.

Two other pitmasters are on Visit Fredericksburg's list. Eaker Barbecue at 607 West Main Street is taking Thanksgiving preorders. Backwoods BBQ at 320 FM 2093 is taking orders for smoked turkey or turkey breast. For prices and pickup times, call either restaurant directly.

Thursday Runs on a Breakfast-to-Lunch Clock

Once the order deadlines pass, Thanksgiving Day follows the same pattern. Visit Fredericksburg's list shows how the day is weighted toward the morning.

  • 5 a.m. Hill Country Donuts & Kolaches and Top Donut open. Both close at 1 p.m.
  • 6 a.m. Taqueria Altos de Jalisco opens and serves until 3 p.m.
  • 7 a.m. El Primo, a food truck, opens and closes at 2 p.m. La Tequila Jalisco, Mi Plaza Mexican Restaurant, The Pharmacy and Whataburger also open at 7.
  • 10:30 a.m. David's Old Fashioned Pit BBQ opens and serves until 2:30 p.m.
  • 11 a.m. 1894 Ranch to Table at Arch Ray and Dos Hermanitas at Munch Food Park open, and both close at 3 p.m. Hill Top Cafe serves 11 a.m. to 3 p.m. by reservation only. Cultures and Nan's Thai To Go open at 11 too.
  • 12:30 and 2:30 p.m. The Club at Barons Creekside offers two seatings, and reservations are required.

Add Junebug's 11-to-1 pickup and the busiest part of a Fredericksburg Thanksgiving falls before mid-afternoon. A household that wants kolaches early and a sit-down turkey lunch can do both before 3 p.m. without cooking. A household that wants a sit-down dinner after dark has fewer choices, which makes the late-afternoon list worth knowing in advance.

The Evening Belongs to a Shorter List

From 4 p.m. on, the roundup narrows to a handful of kitchens. Jack's Chop House and Sushi Tiki open at 4 and close at 9. Martini's Seafood House runs from noon to 9 p.m. Benny's BoK2 y Mas, a food truck, serves noon to 8 p.m. Cultures stays open until 10 p.m., and so does La Tequila Jalisco, which makes it one of the longest days on the list at 7 a.m. to 10 p.m. Mi Plaza and The Pharmacy close at 7, Nan's Thai To Go closes at 7, and Whataburger runs until 11.

That leaves a small group of options for a late dinner, and holiday hours can change. Visit Fredericksburg's own advice is to call ahead before you go. For a reservation at a place with set seatings, call in the next few weeks, not that morning.

Saturday's Tradition Is on North Adams Street

The early Thursday leaves room for the weekend's community event, which comes two days later on the north side of town. The Fredericksburg Standard-Radio Post reports that the 2026 Fredericksburg Texas Turkey Trot is set for Saturday, November 28, at Fredericksburg Elementary School, 1608 N. Adams St.

The schedule starts early:

  1. Packet pickup and race-day registration open at 7 a.m. and close at 8.
  2. The 10K run/walk starts at 8:30 a.m.
  3. The 5K run/walk starts at 8:35 a.m.
  4. The 1-mile youth fun run for ages 10 and under starts at 9:30 a.m.

The 5K and 10K cost $35 through November 27 and $40 on race day. The youth run is $10, and an event shirt is another $10. Early packet pickup is Friday, November 27, from 3 to 6 p.m. at the school, so Friday afternoon becomes part of the plan too. According to the Standard, online registration is through Athlete Guild.

According to the Standard, the courses wind through Fredericksburg neighborhoods, and strollers, babies in carriers and leashed dogs are welcome. A prize goes to the most creative turkey-themed costume. The Standard also reports awards for the top overall male and female finishers in the 5K and 10K and for the top three in several age divisions.

This year the proceeds go to Little Hearts Child Development Center, a local nonprofit that provides early childhood care for infants and toddlers from six weeks to 47 months. Lindsey Gray, a Little Hearts board member and Turkey Trot co-chair, told the Standard, "It's an event that brings people of all ages together, and that sense of community and connection is at the heart of what Little Hearts is all about."

The race falls on Saturday, which fits a town whose Thursday is already full by lunchtime. Friday is for packet pickup, Saturday morning is for the race, and the holiday itself stays free for the meal.

The Week Opens on the Saturday Before

The same early timing applies to the week as a whole. According to Visit Fredericksburg's Thanksgiving weekend guide, the busiest weekend of local events comes before Thanksgiving, not after.

  • Fri., Nov. 20: the preview party for the Gillespie County Historical Society Holiday Market, the start of Fredericksburg Trade Days, and the first night of Fredericksburg Theater Company's "Rudolph the Red-Nosed Reindeer"
  • Sat., Nov. 21: the Holiday Market itself and the Historic Home Tour
  • Sun., Nov. 22: the last day of the first Trade Days weekend and of the "Rudolph" run
  • Fri., Nov. 27 to Sun., Nov. 29: the Trade Days holiday encore, the same weekend as the Turkey Trot

Christmas Nights of Lights begins Tuesday, November 24, two days before Thanksgiving, with its nightly 6 p.m. lighting countdown running through January 5, 2027. That means the holiday lights are already on by the time the turkey is carved.

Put together, the 2026 calendar starts with order deadlines on November 11 and 14, moves to the Holiday Market on November 21 and the Junebug's cutoff on November 23, then a Thursday mostly finished by mid-afternoon and a Turkey Trot at 8:30 on Saturday morning at 1608 N. Adams St.

At Mimi Bartel, we keep track of Fredericksburg's calendar the same way we track its market: by date, by address and well before the deadline. If this season has you thinking about your next move here, we'd be glad to help you plan it.
